Favorite Recipes- Green Chili, Chicken Noodle Soup, Beef Noodle Stirfry

I have found myself cooking a lot more since I started this. Not only is it handy to cook up something and have 4-6 servings to just grab and go with, but there's also a lot of satisfaction in
 eating something you know all the ingredients of. I'd like to highly HIGHLY recommend the Eating for Life cookbook, it's chalked full of amazing REAL PERSON recipes.

GREEN CHILI:  -4 servings-
In a large pot combine and heat to boiling:
     4cups fat-free, reduced sodium chicken broth
     1/2 a chopped onion
     4 portions of Chicken Breast
Reduce heat to low and simmer til chicken is cooked throughout. Remove chicken from broth and allow to cool. Then using a whisk blend in and bring to boil at med-high heat:
     1 package of Knorr Roasted Chicken Gravy mix
     10oz can of diced green chilis (mild/medium/hot of your liking)
     3 cloves of minced garlic (I just use the kind in the jar)
     1/4 cup chopped fresh cilantro
     1/4 tsp cumin
     1 chopped and seeded jalepeno
     1/2 can white hominy drained
Reduce heat to low once boiling. Shred the chicken and add back to broth. Cover and simmer 40 minutes.
Once finished, add in a carb! Wrap up in a whole wheat tortilla is delicious. Or make whole wheat pita/tortilla chips by broiling in oven to dip. Or eat over brown rice. Or have a whole wheat dinner role or some fruit on the side. Add tomatoes, lettuce, and fat-free cheddar cheese.

BEEF NOODLE STIRFRY:   -4 servings-
Prepare and boil according to package directions, drain and set to side
     4 portions of whole wheat spaghetti noodles
Slice into thing small strips
     4 portions of lean steak
Lightly coat a large skillet or wok with olive oil spray. Over medium heat stirfry
     1/8 tsp crushed red pepper flakes
     3 cloves garlic
Add in steak and cook until steak is cooked. Remove steak from skillet. Stirfry in skillet until tender
     1 small onion sliced
     4 stalks of celery
Then add steak back into skillet. Add in and cook til all are heated
     5 cups of spinach leaves
     2/3 cup of lite soy sauce
Stir in noodles and eat.

CHICKEN NOODLE SOUP:   -4 servings-
Boil in a large pot until chicken is cooked through
     4 servings of chicken breast
     12 cups of water
     1/2 tblsp garlic salt
     1/2 tblsp black pepper
     4 chicken bouillon cubes
     3 tblsp onion flakes
Remove chicken and shred. Cook in broth until almost soft throughout
     1 cup chopped carrots
     4 portions of whole wheat egg noodles
Add and boil until everything is hot
     3/4 cup frozen peas
     1/2 cup chopped celery
     and shredded chicken
