A New Favorite Recipe- Stuffed Green Peppers

Found a really mediocre sounding recipe online, altered to how I thought it would taste good, and then made everyone taste it. Got rave reviews (including my own)

Ingredients:
2 servings brown rice cooked by package instructions
1 large chicken breast
1 can low-sodium chicken breast
1/4 tsp black pepper
1/2 small onion chopped
1/2 tsp mincedgarlic
3/4 cup spaghetti sauce (I like Ragu Light)
Red pepper flakes ~1/4 tsp more or less to preference
Olive oil cooking spray
2/3 cup Fat Free Mozarella
3 Medium green peppers with top cut off and seeds removed

Bring chicken broth to boil in small saucepan. Add chicken breast and black pepper. Boil about 10 mins or so until chicken is cooked through. Remove chicken from broth. Into a baking pan (8" square or whatever you have), pour enough hot broth from pot to cover the bottom of the baking pan about 1 cm or so.

In a skillet, cook on medium chopped onion and garlic with a spray of cooking spray until onion is mostly soft. Shred chicken breast with two forks and add to skillet. Cook in skillet until chicken is cooked through. Add spaghetti sauce (mixture should not be runny, but should have sauce throughout) and red pepper flakes to taste. Scoop mixture into green peppers and place peppers into baking pan.

For softer-mushier green peppers, cover with foil. For crisper green peppers (this is how I like it), spritz the top of the peppers lightly with olive oil spray. Place pan in oven (careful not to spill broth) and bake at 375f for 10-12 minutes. Add mozarella cheese to top and let bake a few more minutes until melted. Then eat!
