What I'm Eating Today... (Recipes: Taquito and Lemon Fruit Dip)

Once again, started my morning off with a good ol' workout.

Myoplex light chocolate with 1 cup soy milk, 1 cup water, and a bunch of ice cubes
2 Taquitos (see below) dipped in Natural salsa
1 Apple with 1/3 cup fruit dip (see below)
1 Luna bar
1 Serving leftover vegetable beef barley soup
1 Hardboiled egg and 1 packet low sugar apple cinnemon oatmeal

Recipes:
Homemade Taquitos- makes 4, I eat 2 as a meal
Cook until browned throughout:
     1/4 lbs beef
     1/4 cup chopped onion
Add to meat and boil on medium until water is boiled out:
    2 tblsp taco seasoning (either from a packet, or you can buy in a shaker)
    1/3 cup water
Cut in half:
     2 whole wheat tortillas
Spray a baking sheet with Olive Oil baking spray. Place tortilla half on greased baking sheet, add 1/4 of meat mixture long ways on totilla. Sprinkle with:
    Fat Free Cheddar Cheese
Roll tightly so that ends are on bottom and that whole tortilla got a little bit of baking grease on it. Repeat so you have 4 rolled taquitos and bake in preheated oven at 450 degrees for 10 minutes. Allow to cool all the way before serving or else they don't get hard.

Lemon Fruit Dip
Add to blender and blend until smooth throughout
     1 cup cottage cheese
     1 cup water
     4 packets of splenda
     1 tblsp vanilla extract
Add to running blender
     1 small packet of Jello brand Sugar-Free, Fat-Free Lemon Instant Pudding mix
Pour into bowl. Sprinkle top (I like kind of a lot)
     Cinnemon
Refridgerate for about an hour or two until firm.
Dip your favorite fruit! I liked with strawberries, raspberries, apple, and grapes.
